This lot is 100% Yellow Bourbon, grown at 1600 to 1850 masl. It undergoes an anaerobic natural process, beginning with careful cherry selection and flotation, followed by 36 hours of oxidation and a 48 hour submerged fermentation at temperatures below 25°C. After fermentation, the coffee is gently dried and stabilised to preserve sweetness, clarity, and structure. Luz Ángela’s coffees reflect a balance of heritage and progress, rooted in tradition while embracing thoughtful innovation.
